Breakfast Casserole


  • What you need:
  • 1 pound sliced bacon, diced
  • 1 medium sweet onion, chopped
  • 6 eggs, lightly beaten
  • 3 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1 1/2 cups small curd cottage cheese
  • 1 cup shredded Swiss cheese

What to do:
Preheat Oven to 350 degrees
Cook bacon and onion until crispy and drain.
Combine eggs with potatoes.
Add cheese to mixture, saving some for the top.
Transfer mixture to 9 x 13 inch dish
Top with bacon and cheddar cheese.
Bake for 40 minutes.
